Shannon produced 'Highlight and Contour' in Mumbai, a documentary on gender bias in Bollywood, and further honed her craft in Italy, exploring Italian neorealism.

Her documentary 'Beyond the Pointy Hat', about witchcraft in Australia, earned multiple festival awards, shortly after which she was invited to judge the Free Speech Film Festival in Philadelphia. Shannon is also passionate about production design, contributing to award-winning projects like 'The Forgotten Children'.

In 2021, Shannon joined Brimbank's Arts Advisory Committee. In 2024, she completed her photographic work for 'Share Your Story', highlighting women with lived experiences of family violence, and completed season 1 of 'All In', a TV show about disability.
